Paniyaram is a simple yet nutritious breakfast dish that you could try in case you are bored of eating the same old idli and dosa. It could be paired with coconut chutney. Check out the recipe here.
Ingredients
2 cups raw rice
1 cup white flattened rice
¼ cup grated coconut
2 cups coconut water
4 tbsp sugar
Salt as required
Preparation
Mix the sugar in coconut water
Keep it aside for at least a day for the mixture to ferment
Meanwhile, soak the raw rice for at least 4 hours
Mix the soaked raw rice with grated coconut, fermented coconut water, flattened rice and salt
Keep the batter aside for 7-8 hours for it to rise
Heat oil in an unniyappam vessel
Pour some batter in each hole
Cook for 3 minutes
Flip and cook until both sides are nicely cooked
Delicious paniyaram is ready.
