Bursting with colour, crunch, and fresh flavours, it combines sweetcorn, crisp bell peppers, and juicy cherry tomatoes, all tossed in a zesty lime dressing. Ingredients
For the salad:
½ cup cooked sweetcorn
100 gm cherry tomatoes, sliced
½ green bell pepper, sliced
½ red bell pepper, sliced
½ yellow bell pepper, sliced
2 sprigs arugula
For the dressing:
Juice of 2 limes
2 tbsp olive oil
1 tbsp honey
1 tsp mustard paste
1 tsp minced garlic
¼ tsp pepper powder
¼ tsp salt
½ tsp chopped coriander leaves
Preparation
In a large bowl, combine the sweetcorn, cherry tomatoes, and sliced bell peppers
Add the arugula
In a separate bowl, whisk together lime juice, olive oil, honey, mustard paste, and minced garlic
Season the dressing with pepper powder, salt, and chopped coriander leaves
