Try making cute little paniyarams using the same batter in case you are bored of eating the good old idli or dosa. This could be enjoyed as a filling breakfast or a tasty evening snack. Here is how you can make paniyarams using idli/dosa batter.

Ingredients
2 cups idli/dosa batter
1 tbsp coconut oil
1 tsp mustard seeds
½ tsp cumin seeds
1 tbsp urad dal
1 tbsp yellow gram
1 onion
2 green chillies
1 inch piece of ginger
¼ tsp asafoetida powder
2 sprigs curry leaves
15 cashews
1 carrot (grated)
Salt as required

Preparation
Heat coconut oil in a pan and splutter mustard and cumin seeds
Add urad dal and the yellow gram
Roast until they turn light brown in colour
Now sauté the finely chopped onion
Sauté the finely chopped ginger, green chillies and curry leaves as well
Add asafoetida, chopped cashews and grated carrot when the onion is nicely sautéed and oil begins to separate
Mix and stir until the water in the carrot gets reduced and gets dry
Add this mixture into the dosa batter after it has cooled down
Add salt as required
Mix well
Heat oil in an unniyappam vessel
Pour a tablespoon full of batter in each hole
When the paniyaram is almost cooked and bubbles begin to appear on top, flip them
Cook until both sides are light brown in colour
Enjoy the paniyarams with the classic coconut chutney or spicy shallots chutney.
