Ingredients
1 kg pork (cut into small pieces along with fat)
1 cup shallots
12 garlic cloves
6 green chillies
1 dsp ginger (sliced)
1 dsp mustard seeds
1 tsp cumin seeds
2 cups water
¼ cup tamarind water (gooseberry sized ball of tamarind soaked in water)
1 tsp turmeric powder
Salt as required
1 tsp melted ghee
2 dsp dried coriander seeds
1 tsp pepper corns
½ tsp fenugreek seeds
10 green chillies (seeds removed)
12 small garlic cloves

Preparation
Crush the shallots, garlic, green chillies, ginger, mustard seeds and cumin
Boil 2 cups water in a pressure cooker
When the water begins to boil rapidly add crushed aromatics mix, pork meat, tamarind water, turmeric powder and salt
Cook on low flame until the pork is tender
Transfer the pork into a pan and render the fat by reducing the moisture
The meat would turn black in colour as it gets roasted in its own fat
Meanwhile, heat 1 tsp ghee
Sauté turmeric powder, dried coriander seeds, pepper corns, fenugreek seeds
Grind these into fine powder
Steam the green chillies without the seeds and the small garlic cloves in an idli steamer
Add the powdered masala and the steamed green chillies and garlic into the pork mix
Roast for two more minutes
Tasty and tender pork peralan is ready.
