Samarasa Vishu koottu would add the perfect balance of flavours to the feast. Here is how to make it at home.

Ingredients
2 bitter gourds
4 tbsp tamarind water
4 tbsp jaggery
2 cups buttermilk
Salt as required
Curry leaves as required
1½ tbsp rasam powder
½ tsp mustard seeds
3 tbsp coconut oil
1 tsp urad dal
3 dried chilies
¼ tsp turmeric powder

Preparation
Prepare buttermilk by mixing 1½ - 2 cups water in ¼ cup curd
Add finely chopped bitter gourd into the buttermilk
Keep it aside for at least half-an-hour
Meanwhile, heat coconut oil in a pan
Splutter the mustard seeds
Now roast urad dal and dried chilies
Into it, add the soaked bitter gourd
Add curry leaves too
Saute well
Pour half cup water when the curry leaves are nicely roasted
Add tamarind water
Mix well
Add jaggery and salt to it
Mix well until the bitter gourd pieces absorb the sourness and sweetness
Now add the rasam powder
Cook on simmer for 5 more minutes until the water reduces
Delicious samarasa koottu is ready.
