Raw bananas are a powerhouse of vitamins and minerals. A rich source of potassium, vitamin C and vitamin B6, they help in the effective absorption of calcium. They have low sugar content compared to ripe bananas. Ingredients
2 large raw bananas
2 green chillies
4 small onions
2 garlic pods
1/2 cup grated coconut
1/2 tsp turmeric
1 tsp chilli powder
3/4 tsp cumin
3 tbsp coconut oil
Mustard, for tempering
Curry leaves and salt as needed
Preparation
Boil the unpeeled raw bananas in water for 5 minutes
Wait till the skin turns brownish black
Then, remove them from the water and set aside to cool
After they have cooled down, peel off the skin and grate them into small pieces
Coarsely grind the coconut along with green chillies, small onion, garlic, cumin, chilli powder and turmeric powder
In a pan, heat the coconut oil and splutter the mustard seeds
Add the curry leaves and the ground mixture
Stir a little and add the grated raw bananas
Mix everything together until the bananas and the coconut mixture blend well
Sprinkle some water and make a heap in the pan
Cover the pan with a lid and let it sit on medium flame for 5 minutes
Add salt to taste
Raw banana takes very little time to cook and should be ready in 5 minutes
Remove the lid and stir till the moisture dries up.
