Nutritious sweet banana cutlet is a perfect evening snack

Here is an easy recipe to make crispy and delicious sweet banana cutlet. The snack which has the goodness of banana, flattened rice and cashews is nutritious as well.
Ingredients
4 big bananas (ripe)
1 cup (150 gms) sugar
1/2 coconut (grated)
1/2 tsp cardamom powder
1/2 cup flattened rice
10 cashews
A pinch of salt
Bread crumbs as required
Oil to fry
Preparation
Cut the bananas by splitting it in four and then dice it
Heat a pan
Add sugar and grated coconut
Stir well until the sugar melts
Add the chopped bananas and a pinch of salt
Mix well
Cook for at least two minutes on medium flame
Heat ghee in a pan
Add cashews and flattened rice
Roast well
Add the roasted cashews and flattened rice into the banana-coconut mixture
Mix well
Take it off the flame and set aside to cool
Scoop a bit of this mixture and shape it into cutlets
Coat these in bread crumbs
Heat oil in a pan
Add the crumbed banana cutlets
Fry on medium flame until golden brown.
Notes
Ground nuts too can be used instead of cashews. If you are health conscious, the banana cutlets can be eaten even without frying it in oil. If the banana – coconut mixture is runny, add a bit of rusk powder to make it the right consistency.
