Healthy, tasty potato-coriander sandwich

Potato is a rich source of fibre, potassium, and vitamin C. Here is a simple recipe of potato -coriander sandwich which is an excellent snack to enjoy for breakfast, lunch, or dinner. This healthy dish, which is easy to prepared, can be packed for lunch as well.
Ingredients
1 cup coriander leaves
2-3 green chillies
2 tbsp grated coconut
2 tsp lemon juice
2 potatoes (cooked)
50 gm butter
Salt as required
Cucumber, tomato, and onion (sliced)
1 packet bread
Preparation
Boil the potatoes with salt as required
Mash the peeled and cooked potatoes by adding butter
Prepare the green chutney by blending coriander leaves, green chillies, grated coconut, lemon juice, and salt as required
On a slice of bread, spread the coriander mixture
Place some mashed potato on top of it
Spread some coriander mixture on another bread slice
Place this slice on top of the filling
Press the sandwich to hold it together
Serve with ketchup or tasty chutney
