Mashed jackfruit with pulses is the staple food of Keralites during the summer. It's succulent, with a smooth savoury flavour.
Ingredients
¼ of a ready-to-ripe jackfruit
¼ kg cow peas
Salt to taste
1 coconut grated
3 dsp coconut oil
Preparation
Soak cow peas for a night and drain
After removing the seeds and fibre from jackfruit, slice it into small pieces
Cook the cow peas
When ¾ done, add sliced jackfruit to the cowpeas. Add salt, cover and cook
When cooked, add grated coconut, mix and take off the flame
Add coconut oil when cool, mix and serve
If needed, add two or three split green chillies
