Thai fried rice: Fragrant, flavourful, and easy to make

Bursting with the aroma of jasmine rice, fresh herbs, and vibrant sauces, this delicious dish is sure to be a crowd-pleaser. Follow the steps below to whip up this delightful fried rice in no time!
Ingredients
2 cups jasmine rice
2 tbsp vegetable oil
1 tbsp chopped garlic
2 chillies, sliced
2 tbsp chopped red & green bell peppers
1 tbsp chopped coriander leaves
2 tbsp chopped celery
2 eggs
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp fish sauce
1 tsp sugar
1/2 tsp pepper powder
1 tbsp chopped spring onions
Preparation
Boil water and cook 2 cups of jasmine rice
Heat 2 tablespoons of vegetable oil in a large pan or wok over medium heat
Add chopped garlic and sliced chillies to the hot oil
Saute until fragrant, being careful not to burn the garlic
Toss in the chopped red and green bell peppers, chopped coriander leaves, and chopped celery
Stir-fry for a minute
Crack in 2 eggs and scramble them until fully cooked
Mix the eggs with the vegetables
Add the cooked rice to the pan
Break up any clumps and mix it well with the vegetables and eggs
Pour in 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of fish sauce, 1 teaspoon of sugar, and 1/2 teaspoon of pepper powder
Stir well, ensuring the rice is evenly coated with the sauces
Add 1 tablespoon of chopped spring onions and give everything a final toss
Fluff the rice and transfer it to a serving plate
Garnish with additional coriander leaves, if desired.
