Frying brinjal by adding fish masala is commonplace. But how about marinating it in a mix of flavourful spices and cooking by wrapping it in banana leaves? Ingredients
1 brinjal
2 teaspoons of chilli powder
½ teaspoon coriander powder
¼ teaspoon cumin seeds powder
¼ teaspoon asafoetida powder
½ teaspoon pepper powder
¼ teaspoon turmeric powder
Salt (as required)
Coconut oil (as required)
2 banana leaves
Preparation
Mix all the masala powders with coconut oil to form a thick paste
Clean the brinjal and cut it into shapes of your choice
Coat the brinjal pieces with masala and keep them aside for some time
Now, wrap it tightly in banana leaves and fry
Once fried, remove the banana leaf-wrapped fish from the heat and serve
