Foxtail millet is extremely nutritious and could be used to make many delicious items. You can even swap the commonly used grains with millets in certain popular recipes. Check out this easy recipe of foxtail lemon rice (but with no rice) that could be enjoyed as a filling meal.

Ingredients
½ cup foxtail millet
2 tbsp peanuts
4 green chillies
1 small piece ginger
¼ tsp turmeric powder
2 pinches asafoetida
½ tsp mustard seeds
¾ tsp cumin
1 tbsp urad dal
1 tbsp yellow split gram
3 dried chillies
Salt as required
2 tsp oil
1 sprig curry leaves
Juice of 1 small lemon
2 sprigs coriander leaves
2 cups water

Preparation
Wash the foxtail millet and soak for one hour
Add enough water and boil the foxtail millet
Strain the cooked millet and keep aside to be used later
Roast the peanuts in a hot pan; set them aside
Heat oil in the same pan
Splutter the mustard seeds
Roast the yellow split gram and urad dal
Add cumin seeds too
Roast everything on low flame until the urad dal turns light brown in colour
Now sauté curry leaves, dried chilies, green chilies and ginger
Into it add turmeric powder and asafoetida powder
Mix well
Add the roasted peanuts and cooked foxtail millet
Give everything a good mix
Finally add salt as required and lemon juice too
Close the lid and cook for two more minutes
Garnish with chopped coriander leaves
Enjoy foxtail millet lemon rice with yoghurt raita.
