Coconut bun or dilkush is a sweet snack that is commonly available in the bakeries of Kerala. Here is how you can make tasty dilkush at home.

Ingredients
2 cups all-purpose flour
1 tsp yeast
2 tbsp sugar
½ cup hot milk
2 tbsp oil
Salt as required
1 cup grated coconut
¼ cup tooti fruity
50 gm cherries
1 tbsp cashews
1 tbsp almonds
1 tsp cardamom powder
1 tbsp milk powder
3 tbsp powdered sugar

Preparation
Into a bowl add the hot milk, sugar and yeast
Keep it aside for 5 minutes for the yeast to rise
Into the yeast mix add the all purpose flour, salt and oil
Mix and knead for 5 minutes to prepare soft dough
Keep this aside for at least an hour for the dough to rise
Knead the risen dough and separate into two parts
Roll each piece into thick sheets
Transfer the sheets into another plate
To prepare the filling, mix the grated coconut with tooti fruity, cherries, chopped cashews and almonds, cardamom powder, milk powder and powdered sugar
Spread this filling on the sheet
Place the other sheet over it and seal the edges using water
Allow this to rise
After 30 minutes, rub some milk over the dilkush
Bake for 30 minutes at 175 degree Celsius
Brush some butter over the baked dilkush as soon as it is taken out of the oven
Allow the dilkush to cool down completely
Cut into pieces and enjoy.
