This soft and fluffy stuffed bun could easily be a star item for your iftar. Interestingly, milk and eggs aren't used to make this special dish. Here is how you could make delicious stuffed buns at home.

Ingredients
For the filling:
1½ potatoes
1 tbsp ginger-garlic paste
1 onion
1 lemon
Coriander leaves as required
2 green chillies
1 tbsp mustard seeds
½ tsp turmeric powder
¼ tsp crushed dried chillies
A pinch of asafetida
Salt as required
Curry leaves as required
1 tbsp oil
For the bun:
1 ½ cups all-purpose flour
1¼ tbsp butter
1 tsp yeast
1 tsp sugar
¾ cup lukewarm water
Salt as required

Preparation
To make the filling, heat oil in a pan and splutter mustard seeds
Sauté ginger-garlic paste
Add green chillies, onion and curry leaves
Sauté well
Add turmeric and asafetida
Into it add boiled and mashed potato
Mix well
Add lemon juice and chopped coriander leaves as well
Give everything a good mix
Keep this filling aside to be used later
For the bun, take yeast and sugar in a bowl
Mix the lukewarm warm and keep aside for 5 minutes
Add the yeast mix into the all-purpose flour 
Add butter as well
Mix well and keep aside for at least 4 hours for it to rise
Knead again after the dough has risen nicely
Divide the dough into 5 portions
Take a portion of dough and pull and flatten it 
Place some of the filling that was prepared earlier in the middle
Cover and seal the bun
Make stuffed buns with the rest of the dough as well
Brush some melted butter on the buns
Allow these to rest for at least 45 minutes
Bake the stuffed buns on 180°C for at least 25 minutes.
