Puffs are one of the most popular snacks that are sold in the bakeries in Kerala. Though we love to eat the crispy puff with the delicious filling, we are often concerned about the quality of the puffs that are sold in the bakeries. Here is a unique recipe of tasty egg puff, with thin crispy layers, that can be baked without an oven.

Ingredients
1 ½ cups all purpose flour
Salt as required
2 tbsp butter / ghee
1 egg
Water as required
For filling
1 tbsp oil
3 large onions
3 cloves garlic
Small piece of ginger
5 €“ 10 curry leaves
½ tsp chili powder
¼ tsp turmeric powder
½ tsp black pepper powder
3 boiled eggs

Preparation
Into a bowl add the all purpose flour, butter/ghee, egg, water and salt as required
Mix it into dough and keep it aside for 15 minutes
Meanwhile, heat oil in a pan
Add the onions and sauté well
Into it add garlic, ginger, curry leaves, chili powder, turmeric powder and black pepper powder
Sauté until the masala turns fragrant
Make small balls from the previously prepared dough
Roll out 6 balls into the shape of puri
Smear some butter /ghee on each sheet and stack one over another
Roll all the sheets into thin layers
Cut it into small squares
Place a spoon full of the masala filling and half of a boiled egg in the middle of the square sheets
Place a stand inside a vessel preheated for 10 minutes
Place the puffs on the stand and bake for 30 minutes on low flame.
