Fried lime pickle is a unique recipe that is extremely delicious. This pickle can be stored up to a few months as well. Here is the recipe.

Ingredients
750 gms limes
½ tbsp asafoetida powder
2 tbsp chilli powder (Kashmiri chilli powder or regular one)
¾ tbsp fenugreek powder
3 tbsp sesame oil (to fry the limes)
4 tbsp sesame oil
Garlic cloves as required
Salt as required

Preparation
Wash the limes and wipe them well using a cotton cloth or a tissue
Using a skewer, poke a hole in each lime
Heat sesame oil in a flat bottomed pan
Fry the limes until they change colour and turn soft; make sure to fry on low flame
Allow the limes to cool down before wiping off the burned colour on the zest
Cut the fried limes into small pieces
Mix these lime pieces with salt and asafoetida powder
Heat sesame oil in another pan
Turn off flame and add chilli powder, fenugreek powder and garlic cloves
Sauté well
Into it add the lime pieces
Mix well
Allow this cool down completely
Store the fried lime pickle in air tight containers.
