Cauliflower rice is often used as a substitute for white rice today as it's an excellent source of antioxidants and doesn't have much of calories or carbs. The grain-free, yummy faux rice can be used to make many healthy preparations too, especially if you are on a diet. Check out this rice-chicken combo dish that can be your Sunday special.

Ingredients
1 cauliflower
80 ml olive oil
5 gms chopped garlic
5 gms chopped onions
10 gms chopped red capsicum
10 gms chopped green capsicum
Salt to taste
2 gms turmeric powder
1 chicken breast
5 gms turmeric powder
5 gms ginger garlic paste
10 ml vinegar
4 gms black pepper powder
For garnish
Red radish slices
Pomegranate seeds
Microgreens

Preparation
Grate cauliflower and blanch with salt and turmeric powder
Marinate chicken breast using salt, turmeric, pepper and ginger garlic paste
Keep it aside
Heat olive oil in a pan and add chopped garlic, onion and capsicums
Cook for 2 minutes on medium heat and add the prepared grated cauliflower
Mix well for 1 minute in high heat
Grill the marinated chicken breast in a tawa for 8 to 10 minutes using olive oil
Arrange the prepared cauliflower rice in a bowl
Slice the prepared chicken breast over the rice
Garnish the meal and serve it hot
