The ada or steamed rice cakes with sweet fillings absorbs an incredible aroma from the fresh plantain leaves in which it is wrapped. This steamed ada is often touted as a traditional evening snack of Kerala. It is the perfect dish to enjoy for breakfast on Vishu. Check out the recipe.

Ingredients
For the filling
250 gms jaggery
½ cup water
2 tbsp ghee
Half banana
1 tbsp cashew
1 tbsp raisins
1 cup grated coconut
½ tsp cardamom powder
½ tsp cumin powder
½ tsp dried ginger powder
For the batter
1 cup roasted rice flour
1 ½ water
1 tbsp coconut oil
Salt as required

Preparation
Mix rice flour, water, coconut oil and salt in a frying pan
Turn on the flame and boil this mix
Stir continuously until it thickens up
Turn off the flame when the batter is nicely mixed and sticky
Heat ghee in a pan
Roast the cashews, raisins and finely chopped bananas
Set them aside to be used later
Prepare jaggery syrup by melting it in half cup water
Pour the jaggery syrup into a pan
Add the grated coconut
Cook until the water is completely reduced
Add cardamom powder, cumin powder and dried ginger powder
Mix well
Now add the roasted cashews, raisins and bananas
Give everything a good mix
After the batter has cooled down, mix again using your palms to soften it
Add 1 tsp ghee and mix
Scoop some batter and place on a piece of plantain leaf
Spread into thin patties
Place some filling in the centre
Fold the leaf
Cook them in a steamer for at least 20 minutes
These ada would remain soft and tasty for the entire day.
