Easy egg roast

Cutting onions is the most difficult task while making a delicious egg roast. However, this special egg roast could be made easily without chopping onions and still tastes amazing. Check out the recipe.
Ingredients
4 boiled eggs
4 big onions
1 tomato
4 tbsp coconut oil
½ tsp turmeric powder
2 tsp Kashmiri chilli powder
2 tsp coriander powder
1 tsp garam masala
Salt as required
Curry leaves as required
4 green chillies
Preparation
Cut the onions into big chunks
Crush them in a mixer by turning on the pulse button a few times
You could also add shallots instead of onions to give more flavour to the dish
Heat coconut oil in a thick bottomed pan
Add the crushed onions, diced tomato and some salt
Sauté well
When the onions and tomato are nicely cooked and oil begins to separate add turmeric powder, coriander powder, Kashmiri chilli powder and garam masala
Sauté until the raw smell of the powders are gone
Now add ¼ cup water
Mix well
Into it add the boiled eggs, green chillies and curry leaves
Roast well
Sprinkle a table spoon of coconut oil just before turning off the flame
Enjoy the tasty egg roast with appam, roti, porotta or chapathi.
