Kabsa is a spicy and flavoursome mix of rice and meat which is generally regarded as the national dish of Saudi Arabia. It can be made with a variety of meats, and is popular in almost all the Middle Eastern countries. Here is a recipe of delicious mutton kabsa.

Ingredients
500 gm mutton
2 tbsp ghee
Garam masala mix which is not ground
4 onions (chopped)
2 tbsp garlic (chopped)
1 tbsp salt
1 tsp black pepper powder
1 tsp chilli powder
1 tbsp coriander powder
2 cups tomatoes (diced)
750 gm rice
2 green chillies
Juice of half a lemon
For sauce
1 tomato
1 green chilli
Salt as required

Preparation
Heat ghee in a pan
Add the garam masala mix and onions
Sauté well
Add the mutton pieces, chopped garlic, salt, pepper powder, chilli powder, and coriander powder
Mix well
Add diced tomatoes
Pour 1 1/2 litres water into it and cook well
Add lemon juice and cook for 30 more minutes
Add the soaked rice and green chillies
Cook for 15 minutes with the lid on
Kabsa can be served hot along with daqqus, an Arabic tomato sauce made by blending diced tomato, green chilli and salt.
