A preparation with tender coconut and cashew nuts sounds a bit unusual, but it is indeed a delicious one!
Ingredients
400 gm tender coconut
30 cashew nuts
4 tbsp oil
4 tbsp spring onions with leaves, chopped
1 big tomatoes, chopped
1 tsp ginger-garlic paste
½ tsp turmeric powder
1 tbsp garam masala powder
2 tbsp tomato ketchup
2 tbsp coriander leaves, chopped
Salt to taste
Preparation
Cut the tender coconut kernel into 2 inch strips and keep aside
Soak the cashew nuts in water
Heat the oil in a pan and sauté the spring onions till they change colour
Add the tomatoes and cook till soft
Now add the tender coconut and cashew nuts and sauté for two minutes
Add the ginger garlic paste, turmeric powder and garam masala powder along with one cup of water
Cook till all the water evaporates. Add the salt and tomato ketchup to it, mix well and remove from the fire
Garnish with coriander leaves and serve hot
