Combat summer heat with this gorgeous watermelon salad, spiced and made tangy.
Ingredients
1 medium sized water melon
2 onions sliced fine
2-3 tbsp lime juice
20 basil leaves / mint leaves
Dressing
½ cup extra virgin olive oil
1-2 teaspoon balsamic vinegar
a pinch crushed pepper
Preparation
Place the sliced onion in a bowl and pour the lime juice over it
Leave to steep for about 1 hour in the fridge. It will turn pink and taste tangy
The longer it is allowed to steep, the onions will taste more tangy
Cut the watermelon into large cubes. Take care to remove all the seeds
Place this in a salad bowl and add the lime steeped onions
Wash and dry the basil leaves. Tear and throw in with the water melon and onion Leave to chill in the fridge
Make the dressing by shaking together the balsamic vinegar and extra virgin olive oil
Just before serving, add the dressing. Toss well and serve
