Tender coconut appam

An appam unlike its fluffy with crispy edged variant, the tender coconut appam is tiny, but easily made and packs in a load of taste.
Ingredients
1 cup white rice
½ cup par-boiled rice
¾ cup tender coconut
1 tbsp sugar
Salt, as required
¼ tsp yeast
Preparation
Soak the rice overnight
Grind all the ingredients together and keep 2-3 hours for the batter to ferment
Once it raises, do not mix the batter, let the air bubbles stay within
Now, in a traditional appam pan, pour a small ladle-ful of the batter
Lightly pat it without making it like a dosa
Close the pan, and let it stay until the bottom side cooks well
Do not turn it over, instead take it off the pan and pass to a plate
