What's not to love! Succulent chicken in reduced gravy that tastes oh-so-good and it's homemade.
Ingredients
1 whole chicken
2 onions, sliced thin and long
½ cup shallots
1 tsp fenugreek seeds
2 tsp garlic pods
1 tsp mustard seeds
A few pieces of ginger
1 tsp cumin seeds
1 ½ tsp pepper powder
½ tsp turmeric powder
2 dsp chilli powder
2 sprigs of curry leaves
¼ cup oil
Preparation
Heat a deep-bottomed pan and pour oil
Pass the onions to the pan and saute well
Pass the shallots, ginger, turmeric powder, pepper powder, mustard seeds, cumin seeds, chilli powder, garlic pods, fenugreek seeds and curry leaves into the mixer
Grind to a smooth paste without adding water
Wait until the onion pieces have browned well and then pass them on to a plate
Add some water to the ground masala and pour into the pan with the same oil used to saute onion slices
Add enough salt
Add the chicken pieces to the pan
Mix well until the masala covers the chicken pieces
Add a little water and put the lid on the pan for the chicken to cook well
Once the water starts to dry up, add the fried onion and wait until the chicken gravy reduces
Chicken dry fry is ready to be served
