Pudding, with its soft mousse-like texture, has always impressed sweet lovers. Dark chocolate pudding, old-fashioned tapioca pudding, sticky toffee rice pudding with caramel cream, baked pumpkin pudding, ribbon pudding pie and banana pudding are some of the classic pudding varieties. Here is an incredibly simple recipe for coconut pudding that could be made with just three ingredients. Moreover, baking is not required for this dessert. Check out the recipe.
Ingredients
1 coconut
¼ cup sugar
3 tsp cornflour
Preparation
Scoop out the coconut flesh
Scrape off the brown skin before blending the coconut flesh in a mixer jar
Pour into a sieve and separate the coconut milk
Keep aside ¼ cup of coconut milk to be used later
Mix the cornflour in this coconut milk
Heat a pan and pour the remaining coconut milk
Add sugar when the coconut milk begins to boil
Add the coconut milk mixed with corn flour
Mix well until it thickens
Pour the pudding mixture into a pudding tin
After the pudding cools down, keep it in the fridge to set
Cut the set pudding into desired shapes
