Neyyada: A simple, sweet Malabar snack with ghee and eggs

‘Neyyada’, often also referred to as ‘muttada’, is a popular egg-based snack traditionally prepared in the Kannur and Kozhikode regions of Kerala. It could be made with just four ingredients – ghee, sugar, egg and cardamom powder. As egg and ghee are among the items used, ‘neyyada’ is not only a tasty but also a healthy snack.
Ingredients
4 eggs
4 tablespoons of sugar
1 pinch of cardamom powder
2 teaspoons ghee
Preparation
Break the eggs, pour the contents into a bowl and add sugar along with the cardamom powder
Mix well
Heat a pan and keep the flame at a medium level
Pour some ghee into the pan and when it becomes hot, add a spoon of the egg mixture to it
Spread the mixture thinly so that it takes a round shape
When the mixture is cooked, fold it into half
Add another small spoon of the mixture on the other half and cook it
Repeat the process with the entire mixture
Cook till the mixture acquires a golden-brown appearance
Switch off the flame
The ‘neyyada’ is ready and it could be cut into small pieces to serve
