This super soft instant appam with lace edges will blow your mind

What sounds more middle-Keralite than having a fluffy white appam with golden laced edges for breakfast? The answer could be 'nothing'.

When it comes to appam, the right amount of fermentation is important to ensure the right texture while cooking. Keeping the batter overnight to ensure it has risen is often the way to go. But what if you crave appam on a fine morning and you have no pre-made batter? Well, here is an option.

Check out this instant appam recipe that tastes amazing with spicy curries or with sweetened coconut milk.

Ingredients
3 cups of rice flour
3 and ¾ cups of lukewarm water
1 cup grated coconut
¼ cup flattened rice
½ tsp yeast
½ tsp sugar
1 tsp salt

Preparation
Take grated coconut, flattened rice and water in a mixer jar
Grind into smooth paste
Into it add rice flour, water, yeast, sugar and salt
Grind for two minutes
Pour the batter into a vessel
The batter would have risen after half-an-hour
Give it a good mix before making fluffy appam
Heat the appam pan
Pour a ladle full of batter
Rotate the pan to create the lace edges
Close the lid and cook
Enjoy the soft appam with delicious curries.
