Bamboo rice is known for its amazing nutritional benefits. Try this easy-to-make recipe of bamboo rice payasam to make your Vishu feast extra special.
Ingredients
¼ cup bamboo rice (1 cup - 125 ml)
1 litre milk
1 tsp ghee
1 ½ cup + 3 tbsp sugar
Fried cashews and raisins
Preparation
Separate stones or other impurities from bamboo rice
Wash the bamboo rice a few times
Soak it for at least 7-8 hours
Pressure cook the soaked bamboo rice until 7-8 whistles
Take milk in a thick bottomed uruli or vessel
Add the cooked bamboo rice
Stir continuously until the mixture thickens up
Add 1 ½ cup sugar
Mix well until the sugar dissolves completely
Meanwhile, melt 3 tbsp sugar in another pan
Add the sugar syrup into the payasam
Mix well
Drizzle the ghee into it
Mix well until the payasam turns light pink in colour
Finally, add fried cashews and raisins
Give everything a good mix before turning off the flame.
