Omana pathiri is a much sought after breakfast snack, easy to make too. It’s a dosa like mix of egg and maida with egg masala for its filling. Here is how to make this Ramadan special snack!

Ingredients
3 eggs
2 big onions
1 tablespoon ginger-garlic crushed
2 green chillies
1 sprig curry leaf
1 tomato
Salt as required
¼ teaspoon turmeric powder
1 teaspoon chilly powder
1½ teaspoon masala powder
2 tablespoon coconut oil
For pathiri
1 cup maida
3 eggs
Salt
1¼ cup water
2 eggs
A pinch of turmeric powder
A pinch of salt
2 tablespoon ghee
2 tablespoon milk

Preparation
Beat maida, one egg, salt and 1¼ cup of water in a blender and set aside
Heat oil in a thick bottomed vessel and sauté finely chopped onions, crushed ginger-garlic, green chillies and curry leaves (also finely cut)
When the onions begin to turn light brown, add the masalas and sauté again
Add finely chopped tomatoes once the raw smell of the masala goes
Ensure that the meaty parts of the tomato are removed
Add salt and mix well. Break three eggs into the mix and keep on mixing till the whole mass turns dry
Make small dosas with the batter set aside earlier
Spread a spoonful of egg masala on to the dosa and roll it. Around 10 pathiris can be made from this mix
Set aside the pathiris thus rolled
Blend two eggs along with a pinch of turmeric, salt and two tablespoons of milk
Heat ghee in a non-stick pan, dip the pathiris into the loose batter and fry them on both sides till they turn crisp.
