Avial is undoubtedly one of the most iconic dishes in Kerala cuisine. However, cooking avial is not an easy task. From cutting the vegetables to preparing the spiced coconut base, it involves quite a few steps. Meanwhile, this recipe of tomato avial is pretty easy and requires only one vegetable.

Ingredients
4 tomatoes (not too ripe)
3 green chillies
1 onion
1 cup grated coconut
½ tbsp cumin powder
¼ tsp turmeric powder
½ tbsp chilli powder
Salt as required
1 tbsp coconut oil
2 shallots
Curry leaves

Preparation
Mix the tomatoes, onion, green chillies, curry leaves and salt in a vessel
Cook them without adding water
Crush the grated coconut with cumin powder, turmeric powder, chilli powder, salt and shallots
Add this coconut mixture into the tomato mix
Mix well and cook for some time
Add 1 tbsp coconut oil and curry leaves
Close the lid and keep aside for 3 minutes
Tasty tomato avial is ready.
