Fried soy chunks are extremely tasty and can be enjoyed as a crunchy snack or a side dish with rice or chapathi. Here is the recipe.

Ingredients
1 cup soy chunks
1 tbsp ginger-garlic-green chilli paste
¼ tbsp turmeric powder
½ tbsp Kashmiri chilli powder
½ tbsp garam masala
¼ tbsp pepper powder
1 tbsp coriander powder
1 tbsp cornflour
2 tbsp all-purpose flour
¼ tbsp fennel seeds
Curry leaves as required
Green chillies as per taste
1 tbsp lemon juice
Salt as required
Oil as required

Preparation
Soak the soy chunks in hot water for at least 15 minutes
Drain them and squeeze out the excess water
If the soy chunks are huge you could cut them into small pieces
Marinate the soy chunks with salt,  ginger-garlic-green chilli paste, turmeric powder, Kashmiri chilli powder, garam masala, pepper, coriander powder, cornflour, all-purpose flour and fennel, 
Mix well to make sure that the soy chunks are nicely coated
Now add the lemon juice as well
Heat oil in a pan and add the marinated soy chunks in small batches
Fry on medium flame until the soy chunks are brown
Fry some curry leaves and green chillies as well
Garnish the crunchy soy chunks with fried curry leaves and green chillies before serving.
