Aloo kachori with spicy curry

Aloo kachori is a fluffy flatbread that has tasty potato filling. This popular North Indian street food is often paired with a spicy and flavoursome potato curry. Check out the recipes of the kachori and the potato curry.
Ingredients
For potato curry
4 green chillies
1 ½ tomatoes
3 potatoes (boiled and mashed)
2 tsp chilli powder
3 tsp coriander powder
½ tsp turmeric powder
½ tsp ginger (chopped)
1 ¼ tsp salt
1 tsp sugar
¼ tsp cumin powder
Coriander leaves
1 tbsp ghee
1 tsp cumin seeds
½ tsp asafoetida
2 dried chillies
¾ tsp Kashmiri chilli
For kachori
Ingredients
2 cups all purpose flour
2 cups wheat flour
¾ tsp salt
2 tbsp oil
2 potatoes (boiled and mashed)
1 tsp chilli powder
1 tsp coriander powder
1 tsp chopped ginger
2 green chillies
Chopped coriander leaves
1 tsp cumin
1 tsp mango powder
¾ tsp salt
Preparation
Potato curry
Blend the tomatoes and green chillies in a mixer jar
Transfer this puree into a pan
Add 1 ½ glasses water as well
Now add the mashed potato, chilli powder, coriander powder, turmeric powder, ginger and salt
Mix well and cook for 10 minutes on low flame
Into it add the sugar, cumin powder and chopped coriander leaves
Meanwhile, heat ghee in another pan
Splutter the cumin seeds, dried chillies and asafoetida
Roast the Kashmiri chillies as well
Pour this tempering into the potato curry
Mix well.
Kachori
Prepare the dough by mixing the all purpose flour, wheat flour and salt with water as required
Into the mashed potato mix add the chilli powder, coriander, powder, ginger, coriander leaves, green chilies, cumin, mango powder and salt
Mix well and make small balls
Insert small balls of this spicy potato mix in the dough balls
Roll into small but thick flatbreads
Fry in hot oil
