Whole chicken fry with one tablespoon oil

A whole chicken can easily be fried using just a tablespoon of oil. It is a healthy chicken recipe for those who are on a diet or do not like oily food. This fried chicken pairs best with chpathi, porotta, or roti. Or just enjoy as it is! Here is how you can fry a whole chicken with just a spoon full of oil.

Ingredients
900 gm or 1 whole chicken
2 tbsp Kashmiri chilli powder
½ tsp turmeric powder
½ tsp garam masala
1 tsp salt
½ tsp fennel powder
Red food colour (optional)
2 tbsp vinegar
Water as required
1 tbsp coconut oil
1 inch piece of ginger
6-7 garlic cloves
2 sprigs curry leaves

Preparation
Wash the whole chicken and score it
Make a marinade by mixing Kashmiri chilli powder, turmeric powder, garam masala, salt, fennel powder, red food colour and vinegar in some water
Marinate the scored chicken with this masala paste
Keep aside the marinated chicken for at least an hour
Tie the legs of the chicken together using a thread
Heat coconut oil in a pressure cooker
Place the marinated chicken in the cooker with breast side down
Add crushed ginger and garlic and curry leaves
Pressure cook on medium flame until two whistles
Open the cooker only after the pressure has been released completely
Pour the remaining chicken stock into an iron wok or a nonstick pan
When the stock boils rapidly, add the chicken
Flip and turn the chicken until all the sides are nicely roasted and crispy
This whole fried or roasted chicken tastes amazing when served hot.
