Murukku is a crunchy snack that has its origins in Tamil Nadu. In Tamil, the word 'murukku' means to twist and break. Murukku has, however, become a favourite snack of Keralites too. It adds the perfect crunch to your evening tea.

Women in the agraharams in Palakkad had their own special murukku recipes which they passed down to the younger generations. This butter murukku is usually made during special occasions like weddings or poojas or during festivals like Diwali and Onam. Those who have tasted this snack say that the butter adds a special kick to the murukku. Here is the recipe for the Palakkad-style butter murukku.

Ingredients
1 cup rice flour
¼ cup gram flour
¼ cup Bengal gran (roasted and powdered)
1 tbsp butter
½ tsp cumin
½ tsp asafetida powder
Salt as required
Water to mix
Oil to fry

Preparation
Take rice flour, gram flour, Bengal gram powder, asafetida powder, cumin, butter and salt in a bowl
Mix well
Pour water as required and mix into dough
Put the murukku mould inside the sevanaazhi
Now, fill the dough into the mould
Squeeze the dough into hot oil
Fry murukku on medium flame
Take out the fried murukku when the bubbles in the oil settle on the bottom of the pan.
