The festival of Gudi Padwa marks the Marathi new year and like all Indian festivals, it comes with an array of special dishes. One such dish makes use of the seasonal fruit mango to create a drink that can even ward off heat strokes.

Panna uses raw mango pulp and mint leaves and the end result is a drink so refreshing and tangy that one glass won't do!

Ingredients
3 green raw mangoes
3 tbsp sugar
2 tbsp black salt
1 tsp pepper
1 tsp salt
2 tbsp mint leaves (chopped)
4 cups water
Ice as required
Roasted and ground cumin seeds

Preparation
Boil the cleaned whole raw mangoes until soft (approx 15 mins)
Peel them, once cool
Mash the pulp and use boiled water to create a thick paste
Place the pulp in a sauce pan and heat
Add sugar and cook till dissolved; stir continuously to prevent burning
Take off the heat and add all the condiments
Add chilled water and ice to balance consistency and serve.
