However, many complain that the ivy gourd never gets cooked perfectly while making thoran or stir fry. There is an easy way to make the perfectly cooked delicious kovakka thoran. Try out this simple recipe of ivy gourd and cashews thoran which healthy and tasty as well.
Ingredients
250 gm ivy gourd
1 tbsp coconut oil
50 gm cashews
Grated coconut as required
1 tsp mustard seeds
Some curry leaves
Salt
Turmeric powder
Preparation
Wash the ivy gourd and chop it in desired size
Marinate it with some salt and turmeric and cook by fully covering it with water
Ivy gourd requires more cooking time. It won't be cooked well in oil alone.
Meanwhile soak the cashews in hot water
Heat coconut oil in a pan and splutter some mustard seeds and curry leaves
Add the cooked ivy gourd and sauté well
Into this add the soaked cashews
Cook for a while with the lid on
Add the grated coconut and mix well
Taste for seasoning before turning off the heat.
