Ingredients
125 gm flour
1 tsp baking powder
1/8 tsp salt (if unsalted butter is used)
125 gm granulated sugar
125 gm butter (add salt if it is unsalted butter)
3 eggs
2 tbsp milk (add more, if needed to get the desired drop in consistency)
1 tsp pure vanilla extract
1 tsp orange rind (optional)
115 gm confectioner's sugar
2 tbsp orange juice
Preparation
Preheat oven to 175 degrees Celsius
Sieve baking powder, flour, salt (if using) and keep aside
In a large bowl beat the butter, sugar, and eggs - one at a time
Add vanilla extract
Scrape the bowl with a spatula intermittently
Add flour and milk alternatively, ending with the flour ideally
Pour batter into a prepared (greased and dusted with flour) 8 inch cake tin
Bake for 20 mins or until the tooth pick inserted comes clean
Allow it to cool down
Meanwhile, sieve the confectioner's sugar and add orange juice
Mix well until it is smooth and free of lumps
Pour over the cooled cake
Garnish with chocolate chips and orange segments before serving
