There is no better way to make someone feel special than gifting their favorite cake. But all the fuss about baking is enough to put you off easily. That's why the world needs no-bake cakes. Kottayam based home-baker Jessica gives you this no-bake chocolate biscuit cake recipe that you can whip up easily for this Valentine's Day.
Ingredients
800 gm digestive biscuits
1 tsp vanilla extract
120 gm bittersweet chocolate
120 ml whipping cream
200 gm granulated sugar
150 gm butter
160 gm, cocoa powder
Preparation
In a sauce pan, whisk sugar and cocoa powder together
Add water gradually to the pan
Add butter to the mixture and cook for 5-7 minutes
Cook until the mixture turns thick
Turn off the flame and and add vanilla extract to the mixture
Let the mixture cool down
Pour the mixture into the digestive biscuit pieces
Mix it thoroughly until all the biscuit pieces are coated with the chocolate sauce
Transfer this mixture to a spring-form pan
Level it using a spoon
To give it ganache glaze, heat whipping cream in a sauce pan
When the whipping cream comes to a boil, take it off from the stove
Add the bittersweet chocolate to it and stir well
Make sure there are no lumps
Pour the ganache over the biscuit base
Refrigerate it for 3-4 hour, preferably overnight
Then take it off the refrigerator and unmold it
Garnish with nuts and chocolate chips Slice and serve
