In the month of Karkidakam, following a diet to keep monsoon related diseases at bay is recommended by Ayurveda. Among the many broths and porridge, a noted one is the _thari kanji_ or semolina sweet broth. It's not only healthy, but scrumptious as well.
Ingredients
2 tbsp semolina/rava
2½ cups milk
1½ cup water
4 tbsp sugar
½ tsp cardamom powdered
Seasoning
1 tbsp ghee/clarified butter
1 small red shallot, finely chopped
3-4 cashew nuts chopped
5-6 raisins
Preparation
Combine the milk with water and bring it to a boil
Add sugar
To this, add the rava/semolina and sugar
Simmer on low heat for 5-8 minutes, until everything merges well and the semolina gets cooked
Be careful not to let it boil over. Add the cardamom powder and add more sugar if needed
Take the mixture off the flame and let it absorb the flavours
The mixture should be of the consistency of a watery smoothie
For seasoning, heat ghee in a pan, and sauté the cashew nuts, raisins and shallots on low heat till they turn golden
Remove from fire and pour over the milk mixture
