Pappadams are always part of a proper Kerala meal. Now you too can make it at home without losing its authentic taste and smell. It is made with the best quality urad dal (uzhunnu), in the traditional method.

Ingredients
1 cup urad dal (uzhunnu)
½ tsp baking soda
1 tsp salt
2 tsp sesame oil
½ cup water

Preparation
Powder 1 cup urad dal in a mixer to a fine powder
Transfer it to a bowl and add salt and baking soda
Add half cup water gradually and make it into a dough (slightly stiff than chapathi dough)
To the dough, add 2 tsp sesame oil and knead well
Transfer the stiff dough onto a counter top and pound it down with a pestle
Fold the dough and flatten it as you go for 10 to 12 times till it turns soft
Roll it out into a small log and divide into 3 portions. Then roll each log into a long log
Cut each long log into 1/2 inch portions
On a floured surface, roll out each portion into thin discs
Lay them out on parchment paper and dry them under the sun/fan for 10-15 minutes
Store them in airtight containers and fry as needed in hot oil
