Ingredients
20-25 hibiscus leaves
1 cup raw rice/dosa rice
1/4 cup urad dal
1 tbsp rice flakes (poha)
1/4 tsp fenugreek seeds
1/2 tsp sugar
Salt to taste
Water, as needed
1 onion
1-inch piece of ginger
1 sprig curry leaves
1 tbsp chopped coriander leaves
2 green chillies

Preparation
Rinse the dosa rice, urad dal, and fenugreek seeds
Soak them together for 5-6 hours
Drain the water and transfer the soaked ingredients to a blender
Add the washed and cleaned hibiscus leaves
Pour in 1/2 cup water and blend until the mixture is slightly coarse
Add the rice flakes (poha) and blend again until the batter is smooth
Add water as needed to adjust the consistency
Set the batter aside for 8 hours to ferment
Chop the onion and ginger, set them aside
Add salt and sugar to the fermented batter and mix well
Heat a pan or tawa and pour a ladleful of batter onto it
Spread the batter evenly to make a medium-thin crepe
Sprinkle the chopped onion, ginger, curry leaves, and coriander leaves on top
Cover and cook until the bottom side of the dosa starts to turn brown
Flip and cook until both sides are done
Serve the hibiscus dosa hot with a spicy chutney for breakfast.
