'Vellayappam' means different things in various parts of Kerala but in Kottayam, it is a soft dosa look-alike pancake prepared combining grated coconut, raw rice, yeast, sugar, and more. Kottayam's vellayappam is a great Christmas breakfast and is also prepared commonly on regular days in the region's households. Vellayappam pairs well with any non-veg curry, vegetarian dishes like kadala curry, green piece curry, vegetable stew and more.

Ingredients
3 glasses of raw rice
1.5 glass of grated coconut
1 glass of cooked rice
1 teaspoon yeast
3 tablespoons sugar
10 numbers of shallots
3 numbers of garlic
1 teaspoon cumin seeds
Adequate salt

Preparation
Wash the raw rice thoroughly and soak it for six hours
Grind the soaked raw rice along with grated coconut, cooked rice, yeast, sugar, and salt to taste so that it turns into a fine batter
Take a little batter and grind it again with shallots, garlic and cumin seeds
Mix both batters together properly and close the vessel Keep it aside to ferment for four to five hours
Spread the batter on a hot frying pan to prepare super-soft Kottayam-style ‘vellayappam’
