Vellakareppam, panjaarayappam, white unniyappam, Kannurappam... this traditional snack from Kannur is known by many different names.

Though it's common in North Kerala, some of the South Kerala cities and towns have also started serving the snack, especially in railway stations. Here's how to prepare this cute sweet.

Ingredients
2 tbsp maida
6 tbsp sugar
3 cardamoms, crushed
1 cup raw rice
1 tbsp boiled rice
5 – 6 tbsp sugar
A pinch of salt
Oil as required

Preparation
Soak rice for around 5 hours and wash it
Transfer it to a mixie jar with boiled rice and water
Blend into a coarse paste, add sugar and maida
Blend it all into a fine batter, transfer it into a bowl to keep it aside for 9 hours
To this, add salt, crushed cardamoms and soda and mix well
Heat oil in an unniyappam maker
Pour a spoon of batter into each of its holes
Flip the sweet when one side rises
Cook until the lower side of the snack turns brown. 
Serve with hot coffee or tea
