If you are in the mood for a vegan, simple and pocket-friendly meal but don't have too much time to spare either, turn to the good-old, trustworthy potato. A flavour-packed potato curry, which is a perfectly thrifty dish can make for a great meal though all it has are extremely simple ingredients like onion, garlic and the regular spices.

You can pair it with any flatbread and rice and when you are done with the meal, the curry's starchy-spicy goodness will fill your tummy and mind.

Ingredients
2 diced potatoes
1/2 an onion sliced
4 slices of garlic
Salt
1 teaspoon turmeric powder
1/4 cup water
Curry leaves
2 teaspoon coriander powder
2 teaspoon garam masala
2 teaspoon chilli powder
2 tablespoon coconut oil
Mustard seeds

Preparation
Transfer potatoes, onion and garlic into a pressure cooker
Add half a teaspoon of all powders, a little salt and water
Mix well
Cook for two or three whistles
Keep it aside
Heat the coconut oil on a pan and splutter mustard seeds, add curry leaves
Add half a teaspoon or a little bit more (according to taste) of turmeric powder, coriander powder and chilli powder
Fry it all on low flame for little more than a minute
Add the cooked potato and other ingredients in the pressure cooker to this mixture
Smash the potatoes slightly
Boil for two or three minutes
Enjoy the curry with rice or breads
