Ripe plantains are storehouse of energy and could be included in the regular diet of children. However, most kids do not enjoy eating plantains as they are.

So, here is a trick to make them enjoy plantains along with the goodness of ghee, cashews and grated coconut too. Check out the recipe of sweet banana balls which could be enjoyed as a filling evening snack.

Ingredients
2 plantains
1 cup grated coconut
6 tbsp flattened rice
2 tbsp sugar
¾ cup all purpose flour
1 tbsp rice powder
¼ tsp turmeric powder
½ tsp cardamom powder
¼ tsp salt
1 tbsp ghee
Cashews as required
Raisins as required
Coconut oil as required
Water as require

Preparation
Heat ghee in a pan
Fry the cashews and raisins
Into it add grated coconut
When the coconut turns dry, add small pieces of ripe plantain
Add sugar, flattened rice and cardamom powder too
Give everything a good mix
Allow this filling to cool down
After it has cooled down, mix again
To make the batter, take all purpose flour, rice powder, turmeric powder, salt and sugar in a bowl
Pour enough water
Mix well into soft batter
Heat coconut oil in a pan
Make small balls from the plantain – coconut mixture
Dip these balls in the batter
Fry them in hot oil
Flip and cook until all sides are ready
Tasty and healthy banana balls are ready.
