Have leftover rice? Do not throw it in the bin. Here is an easy yet yummy breakfast recipe that makes use of the leftover rice.
Ingredients
2 cups boiled rice
1 cup roasted rice powder
2 tbsp water
1 tbsp coconut oil
Salt as required
¼ cup grated coconut
Preparation
Grind the rice by adding 2 tbsp water
Add salt and roasted rice powder
Mix into soft dough
Add 1 tbsp oil if the dough sticks on your fingers
Mix at least for a minute
Fill the idiyappam mould (sevanazhi) with the dough
Press into the idly vessel
Add grated coconut too
Cook in steamer for 3 minutes
Enjoy the soft idiyappam with curries.
