A healthy alternative to traditional rice payasam is the gothambu payasam, made with broken wheat. This recipe also uses jaggery instead of sugar. Check out the pretty simple recipe of broken wheat payasam for the Onam season.

Ingredients
1 cup broken wheat
350 gms jaggery
¾ cup water
1 tbsp ghee
½ cup coconut shards
Palm full of cashews
Palm full of raisins
5 cups second extract of coconut milk
½ tsp salt
½ tsp cumin powder
1 tsp cardamom powder
1 tsp dried ginger powder
1 cup first extract of coconut milk

Preparation
Cook the washed broken wheat in a pressure cooker in two and a half glass water
Make jaggery syrup by melting jaggery in water on a low flame
Heat ghee in a pan
Fry the coconut shards, cashews and raisins
Set them aside to be used later
Roast the cooked broken wheat in the same pan
Into it add the jaggery syrup and the second extract of coconut milk
Stir well until it boils
Add salt, cardamom powder and cumin powder when it begins to thicken
Mix well
Add the first extract of coconut milk
Keep stirring; do not allow it to boil anymore
Turn off the flame
Garnish with fried coconut shards, cashews and raisins
Mash some ripe bananas and enjoy the delicious broken wheat payasam.
