Ingredients
1 ½ tbsp semolina
2 ½ cups milk
½ cup sugar
A pinch of salt
1 tbsp gelatine (soaked in 2 tbsp water)
Zest and juice of 1 lemon
Whites of 2 eggs
½ cup apricot (cooked in some water)

Preparation
Mix the semolina in some milk
Boil the remaining milk
Into it, add the semolina mix and sugar
Stir until the mixture thickens up
Add lemon juice and zest
Add beaten egg whites too
Mix and stir slowly
Set the dessert in fridge
Garnish with cooked apricots before serving the dessert.
