Ingredients
500 gms ginger (peeled, cleaned and cut into small pieces)
200 gms shallots (chopped)
20 gms green chillies (chopped)
Lemon sized ball of tamarind (soaked in hot water)
Coconut oil to fry
5 gms mustard seeds
3 red chillies
Some curry leaves
30 gms Kashmiri chilli powder
5 gms roasted fenugreek powder
2 gms asafoetida powder
20 gms jaggery
Salt as required
Preparation
Heat coconut oil in a pan
Fry the ginger until they turn crispy and dark in colour
Grind this fried ginger into coarse powder without adding water
Heat the same oil in which the ginger was fried
Splutter mustard seeds
Sauté red chillies and curry leaves
Add shallots and green chillies
Sauté well
Add Kashmiri chilli powder and fenugreek powder
Sauté for a minute on low flame
Add the tamarind water and salt
Cook well
Finally, add the fried ginger powder and jaggery
Mix well
Enjoy the ginger curry as a side dish with piping hot rice.
