Melt-in-the-mouth beetroot halwa is a healthy dessert that could be enjoyed during the Diwali season. Artificial colourants aren’t added in this halwa as the beetroot gives it an attractive natural colour. Here is the recipe.

Ingredients
½ cup all purpose flour
1 ½ cups sugar
1 ½ cups water
Half beetroot
¼ cup + 2 tbsp ghee
Cashews as required
Cardamom powder as required

Preparation
Heat ghee in a pan
Fry the cashews and set them aside
Into the same pan, add the all purpose flour
Roast well
Now add 1 cup water, ½ cup beetroot juice and sugar
Mix well
Add ghee when the halwa begins to thicken
Add the rest of the ghee, fried cashews and cardamom powder when the water reduces
Mix well
Transfer the halwa into a greased vessel
Cut the beetroot halwa into small pieces after it has cooled down.
